High nutrient discharge from groundwater (GW) into surface water (SW) have multiple undesirable effects on river water quality. With the aim to estimate the impact of anthropic pressures and river–aquifer interactions on nitrate status in SW, this study integrates two hydrological simulation and water quality models. PATRICAL models SW–GW interactions and RREA models streamflow changes due to human activity. The models were applied to the Júcar River Basin District (RBD), where 33% of the aquifers have a concentration above 50 mg NO3−/L. As a result, there is a direct linear correlation between the nitrate concentration in rivers and aquifers (Júcar r2 = 0.9, and Turia r2 = 0.8), since in these Mediterranean basins, the main amount of river flows comes from groundwater discharge. The concentration of nitrates in rivers and GW tends to increase downstream of the district, where artificial surfaces and agriculture are concentrated. The total NO3− load to Júcar RBD rivers was estimated at 10,202 tN/year (239 kg/km2/year), from which 99% is generated by diffuse pollution, and 3378 tN/year (79 kg/km2/year) is discharged into the Mediterranean Sea. Changes in nitrate concentration in the RBD rivers are strongly related to the source of irrigation water, river–aquifer interactions, and flow regulation. The models used in this paper allow the identification of pollution sources, the forecasting of nitrate concentration in surface and groundwater, and the evaluation of the efficiency of measures to prevent water degradation, among other applications.

Concurrently, domestic vegetable supply is highly seasonal and inadequate to meet the domestic food demand, which consequently poses risks to food security locally, particularly in rural areas. This study assesses the impact of climate change on the yields and crop water productivity (CWP) of tomato, pak choi and yard-long bean cultivated year-round under different irrigated conditions (drip, furrow and net irrigation) in Siem Reap, Cambodia. The findings of this study show a similar annual precipitation decline (-23%) when comparing the 2017-2040 and 2070-2099 periods for both Representative Concentration Pathways (RCPs 4.5 and 8.5), though with significant seasonal differences between the two climate scenarios. Increasing water and heat-stress conditions are expected to have adverse impacts on tomato plants compared to pak choi and yard-long bean, which have a much higher heat tolerance. Differing yield trends are expected depending on the transplanting/sowing date, irrigation method and RCP. In tomato, for example, a -55% yield loss is projected by the end-century (2070-2099) when transplanting in January, whereas a + 37% yield increase is expected between November and December over the same period. In addition, pak choi yield enhancements of up to +30% are projected if sowing in May under RCP 8.5 for both drip and net irrigation conditions. Similarly, higher yard-long bean yields are simulated under RCP 8.5 (+29%) compared to RCP 4.5 (+11%) for the average of all sowing dates (January to December) and irrigation methods (drip, furrow and net irrigation). In sum, the findings of this work are relevant for evidence-based decision-making and the development of projects, policies and programmes increasingly informed by simulation results from bundling climate-crop approaches to transform agriculture in response to climate change.

AbstractSoil micronutrients are capital for the delivery of ecosystem functioning and food provision worldwide. Yet, despite their importance, the global biogeography and ecological drivers of soil micronutrients remain virtually unknown, limiting our capacity to anticipate abrupt unexpected changes in soil micronutrients in the face of climate change. Here, we analyzed >1300 topsoil samples to examine the global distribution of six metallic micronutrients (Cu, Fe, Mn, Zn, Co and Ni) across all continents, climates and vegetation types. We found that warmer arid and tropical ecosystems, present in the least developed countries, sustain the lowest contents of multiple soil micronutrients. We further provide evidence that temperature increases may potentially result in abrupt and simultaneous reductions in the content of multiple soil micronutrients when a temperature threshold of 12–14°C is crossed, which may be occurring on 3% of the planet over the next century. Altogether, our findings provide fundamental understanding of the global distribution of soil micronutrients, with direct implications for the maintenance of ecosystem functioning, rangeland management and food production in the warmest and poorest regions of the planet.

This study analyzes 174 tank milk samples taken from 89 commercial farms located all along the Cantabrian Coast (Green Spain). Sampling was performed in two periods: autumn 2016 and spring 2017. A survey was carried out for every day of sampling to record the average lactating dairy cow production and its diet composition. For each sample, the fatty acid (FA) profile (49 FA plus its main relationships) and nine fat-soluble antioxidant (FSA) profiles (retinol (vitamin A), α- and Υ-tocopherol (vitamin E), all-trans-β-carotene, 9-cis-β-carotene, 13-cis-β-carotene, lutein, zeaxanthin, and β-cryptoxanthin) were determined. The milk production varied between 7.3 and 45.9 liters per cow per day, highlighting the diversity found among production systems. The milk fat content ranged from 2.64% to 4.38% and the protein content from 2.87% to 3.56%. Regarding the fatty acids profile, the percentage of saturated fat varied between 59.95% and 75.99%. The linolenic acid content fluctuated between 0.21 and 1.31 and rumenic acid ranged from 0.20 to 2.47 (g 100 g−1 total FA). The most important correlations between diet and milk FA were always related to the content of fresh grass and total forage (which is defined by both fresh and conserved forage derived from fresh grass (GCF)) in the diet. The content of vaccenic acid, linolenic acid, total omega-3, rumenic acid, and total CLA isomers showed the highest correlation with the proportion of fresh grass in the diet. The antioxidant contents were also highly variable, although correlations with dietary components were lower. The highest correlations were between total forage content (fresh grass (FG) plus GCF) and lutein, all-trans-β-carotene, and 13-cis-β-carotene. Diets without fresh grass had lower omega-3 content, CLA, vaccenic acid, lutein, all-trans-β-carotene, and 13-cis-β-carotene.

The major drivers of this industry are the increasing prevalence of egg allergies, awareness towards environmental sustainability, and the shift to vegan diets. This study intends to discuss, for the first time, the vegan egg market, including their formulation, nutritional aspects, and some applications (i.e., mayonnaise and bakery products). Recreating the complete functionality of eggs using plant-based ingredients is very challenging due to the complexity of eggs. Current, but scarce, research in this field is focused on making mixtures of plant-based ingredients to fit specific food formulations. Nutritionally, providing vegan eggs with similar or higher nutritional value to that of eggs can be of relevance to attract health-conscious consumers. Claims such as clean labels, natural, vegan, animal-free, gluten-free, and/or cholesterol-free can further boost the position of vegan eggs in the market in the coming year. At present, this market is still in its infancy stages, and clear regulations of labeling, safety, and risk assessment are deemed mandatory to organize the sector, and protect consumers.

Thanks to food technology, the production of cold tomato soups such as salmorejo, a traditional Spanish dish, has become industrialised. Thermal treatments play an important role in ready-to-eat meals, prolonging their shelf-life. Radiofrequency (RF) heating is less energy-intensive than conventional heat exchangers and has been successfully used to pasteurise food; novel applications, however, provide results at laboratory or pilot scale, so conclusions might not be translatable to industry. In this study, a prospective Life-Cycle Assessment of salmorejo pasteurised using RF was performed to highlight the relevance of upscaling and to compare its environmental impacts with those of conventional pasteurisation. “Gate-to-gate” results show that the pilot has greater environmental impacts due to its greater energy consumption, as thermal energy is not recovered. The packing and landfill of organic waste exhibit the highest impacts at industrial scale. RF technology does not imply significant environmental improvements versus conventional pasteurisation. Potential changes in the energy background of future scenarios have relevant consequences in the environmental impacts. “Farm-to-factory-gate” analysis highlights ingredients and tomato valorisation as the most impacting stages. The prospective LCA of scaled up scenarios constitutes a tool for environmental screening in food ecodesign, contributing to Sustainable Development Goal 12.

This study shows the energy potential of pine wood waste for the production of solid biofuels, and was carried out in an indigenous community in the state of Michoacán. One of the main economic activities of this community is the production of handcrafted furniture, which generates a large amount of wood waste. The most relevant results obtained in this research show that the community generates approximately 2268 kg of sawdust and 5418 kg of shavings per week, and the estimated energy potential per year for both sawdust is 1.94 PJ and for shaving is 4.65 PJ. Based on the particle size observed, the wood residue can be used to generate pellets or briquettes. Other average results in sawdust and (shavings) are the following: initial moisture content 15.3% (16.8%), apparent density 169.23 kg/m3 (49.25 kg/m3), ash 0.43% (0.42%), volatile material 84.9% (83.60%), fixed carbon 14.65% (15.96%), hemicelluloses 12.89% (10.68%), cellulose 52.68% (52.82%), lignin 26.73% (25.98%), extractives 7.69% (10.51%), calorific value 17.6 MJ/kg (17.9 MJ/kg). The major chemical elements in the ash were Al, K. Fe, Ca, P, Na, and Mg. Finally, the results obtained indicate that this biomass can be used to generate pellets or briquettes in this indigenous community.

Energy poverty is a multidimensional and complex phenomenon, and several indicators have been developed to evaluate and quantify it. However, often greater complexity does not mean greater precision. In the case of Chile, the Energy Poverty Network established the Three-dimensional and Territorial Indicator of Energy Poverty (EPTTI in Spanish) to assess the energy poverty situation of Chilean families. The EPTTI is based on a multidimensional approach with 10 indicators. Although, their evaluation involves resources that may hinder a practical application. This study analyzed the consistency between the individual responses of an indicator and the adapted EPTTI evaluation, using a database of 641 families. The results show that the excessive energy expenditure and the type and energy source of heating systems indicators are the variables with the greatest influence on energy poverty assessments. High nutrient discharge from groundwater (GW) into surface water (SW) have multiple undesirable effects on river water quality. With the aim to estimate the impact of anthropic pressures and river–aquifer interactions on nitrate status in SW, this study integrates two hydrological simulation and water quality models. PATRICAL models SW–GW interactions and RREA models streamflow changes due to human activity. The models were applied to the Júcar River Basin District (RBD), where 33% of the aquifers have a concentration above 50 mg NO3−/L. As a result, there is a direct linear correlation between the nitrate concentration in rivers and aquifers (Júcar r2 = 0.9, and Turia r2 = 0.8), since in these Mediterranean basins, the main amount of river flows comes from groundwater discharge. The concentration of nitrates in rivers and GW tends to increase downstream of the district, where artificial surfaces and agriculture are concentrated. The total NO3− load to Júcar RBD rivers was estimated at 10,202 tN/year (239 kg/km2/year), from which 99% is generated by diffuse pollution, and 3378 tN/year (79 kg/km2/year) is discharged into the Mediterranean Sea. Changes in nitrate concentration in the RBD rivers are strongly related to the source of irrigation water, river–aquifer interactions, and flow regulation. The models used in this paper allow the identification of pollution sources, the forecasting of nitrate concentration in surface and groundwater, and the evaluation of the efficiency of measures to prevent water degradation, among other applications.

Concurrently, domestic vegetable supply is highly seasonal and inadequate to meet the domestic food demand, which consequently poses risks to food security locally, particularly in rural areas. This study assesses the impact of climate change on the yields and crop water productivity (CWP) of tomato, pak choi and yard-long bean cultivated year-round under different irrigated conditions (drip, furrow and net irrigation) in Siem Reap, Cambodia. The findings of this study show a similar annual precipitation decline (-23%) when comparing the 2017-2040 and 2070-2099 periods for both Representative Concentration Pathways (RCPs 4.5 and 8.5), though with significant seasonal differences between the two climate scenarios. Increasing water and heat-stress conditions are expected to have adverse impacts on tomato plants compared to pak choi and yard-long bean, which have a much higher heat tolerance. Differing yield trends are expected depending on the transplanting/sowing date, irrigation method and RCP. In tomato, for example, a -55% yield loss is projected by the end-century (2070-2099) when transplanting in January, whereas a + 37% yield increase is expected between November and December over the same period. In addition, pak choi yield enhancements of up to +30% are projected if sowing in May under RCP 8.5 for both drip and net irrigation conditions. Similarly, higher yard-long bean yields are simulated under RCP 8.5 (+29%) compared to RCP 4.5 (+11%) for the average of all sowing dates (January to December) and irrigation methods (drip, furrow and net irrigation). In sum, the findings of this work are relevant for evidence-based decision-making and the development of projects, policies and programmes increasingly informed by simulation results from bundling climate-crop approaches to transform agriculture in response to climate change.

AbstractSoil micronutrients are capital for the delivery of ecosystem functioning and food provision worldwide. Yet, despite their importance, the global biogeography and ecological drivers of soil micronutrients remain virtually unknown, limiting our capacity to anticipate abrupt unexpected changes in soil micronutrients in the face of climate change. Here, we analyzed >1300 topsoil samples to examine the global distribution of six metallic micronutrients (Cu, Fe, Mn, Zn, Co and Ni) across all continents, climates and vegetation types. We found that warmer arid and tropical ecosystems, present in the least developed countries, sustain the lowest contents of multiple soil micronutrients. We further provide evidence that temperature increases may potentially result in abrupt and simultaneous reductions in the content of multiple soil micronutrients when a temperature threshold of 12–14°C is crossed, which may be occurring on 3% of the planet over the next century. Altogether, our findings provide fundamental understanding of the global distribution of soil micronutrients, with direct implications for the maintenance of ecosystem functioning, rangeland management and food production in the warmest and poorest regions of the planet.

This study analyzes 174 tank milk samples taken from 89 commercial farms located all along the Cantabrian Coast (Green Spain). Sampling was performed in two periods: autumn 2016 and spring 2017. A survey was carried out for every day of sampling to record the average lactating dairy cow production and its diet composition. For each sample, the fatty acid (FA) profile (49 FA plus its main relationships) and nine fat-soluble antioxidant (FSA) profiles (retinol (vitamin A), α- and Υ-tocopherol (vitamin E), all-trans-β-carotene, 9-cis-β-carotene, 13-cis-β-carotene, lutein, zeaxanthin, and β-cryptoxanthin) were determined. The milk production varied between 7.3 and 45.9 liters per cow per day, highlighting the diversity found among production systems. The milk fat content ranged from 2.64% to 4.38% and the protein content from 2.87% to 3.56%. Regarding the fatty acids profile, the percentage of saturated fat varied between 59.95% and 75.99%. The linolenic acid content fluctuated between 0.21 and 1.31 and rumenic acid ranged from 0.20 to 2.47 (g 100 g−1 total FA). The most important correlations between diet and milk FA were always related to the content of fresh grass and total forage (which is defined by both fresh and conserved forage derived from fresh grass (GCF)) in the diet. The content of vaccenic acid, linolenic acid, total omega-3, rumenic acid, and total CLA isomers showed the highest correlation with the proportion of fresh grass in the diet. The antioxidant contents were also highly variable, although correlations with dietary components were lower. The highest correlations were between total forage content (fresh grass (FG) plus GCF) and lutein, all-trans-β-carotene, and 13-cis-β-carotene. Diets without fresh grass had lower omega-3 content, CLA, vaccenic acid, lutein, all-trans-β-carotene, and 13-cis-β-carotene.

The major drivers of this industry are the increasing prevalence of egg allergies, awareness towards environmental sustainability, and the shift to vegan diets. This study intends to discuss, for the first time, the vegan egg market, including their formulation, nutritional aspects, and some applications (i.e., mayonnaise and bakery products). Recreating the complete functionality of eggs using plant-based ingredients is very challenging due to the complexity of eggs. Current, but scarce, research in this field is focused on making mixtures of plant-based ingredients to fit specific food formulations. Nutritionally, providing vegan eggs with similar or higher nutritional value to that of eggs can be of relevance to attract health-conscious consumers. Claims such as clean labels, natural, vegan, animal-free, gluten-free, and/or cholesterol-free can further boost the position of vegan eggs in the market in the coming year. At present, this market is still in its infancy stages, and clear regulations of labeling, safety, and risk assessment are deemed mandatory to organize the sector, and protect consumers.

Thanks to food technology, the production of cold tomato soups such as salmorejo, a traditional Spanish dish, has become industrialised. Thermal treatments play an important role in ready-to-eat meals, prolonging their shelf-life. Radiofrequency (RF) heating is less energy-intensive than conventional heat exchangers and has been successfully used to pasteurise food; novel applications, however, provide results at laboratory or pilot scale, so conclusions might not be translatable to industry. In this study, a prospective Life-Cycle Assessment of salmorejo pasteurised using RF was performed to highlight the relevance of upscaling and to compare its environmental impacts with those of conventional pasteurisation. “Gate-to-gate” results show that the pilot has greater environmental impacts due to its greater energy consumption, as thermal energy is not recovered. The packing and landfill of organic waste exhibit the highest impacts at industrial scale. RF technology does not imply significant environmental improvements versus conventional pasteurisation. Potential changes in the energy background of future scenarios have relevant consequences in the environmental impacts. “Farm-to-factory-gate” analysis highlights ingredients and tomato valorisation as the most impacting stages. The prospective LCA of scaled up scenarios constitutes a tool for environmental screening in food ecodesign, contributing to Sustainable Development Goal 12.

This study shows the energy potential of pine wood waste for the production of solid biofuels, and was carried out in an indigenous community in the state of Michoacán. One of the main economic activities of this community is the production of handcrafted furniture, which generates a large amount of wood waste. The most relevant results obtained in this research show that the community generates approximately 2268 kg of sawdust and 5418 kg of shavings per week, and the estimated energy potential per year for both sawdust is 1.94 PJ and for shaving is 4.65 PJ. Based on the particle size observed, the wood residue can be used to generate pellets or briquettes. Other average results in sawdust and (shavings) are the following: initial moisture content 15.3% (16.8%), apparent density 169.23 kg/m3 (49.25 kg/m3), ash 0.43% (0.42%), volatile material 84.9% (83.60%), fixed carbon 14.65% (15.96%), hemicelluloses 12.89% (10.68%), cellulose 52.68% (52.82%), lignin 26.73% (25.98%), extractives 7.69% (10.51%), calorific value 17.6 MJ/kg (17.9 MJ/kg). The major chemical elements in the ash were Al, K. Fe, Ca, P, Na, and Mg. Finally, the results obtained indicate that this biomass can be used to generate pellets or briquettes in this indigenous community.

Energy poverty is a multidimensional and complex phenomenon, and several indicators have been developed to evaluate and quantify it. However, often greater complexity does not mean greater precision. In the case of Chile, the Energy Poverty Network established the Three-dimensional and Territorial Indicator of Energy Poverty (EPTTI in Spanish) to assess the energy poverty situation of Chilean families. The EPTTI is based on a multidimensional approach with 10 indicators. Although, their evaluation involves resources that may hinder a practical application. This study analyzed the consistency between the individual responses of an indicator and the adapted EPTTI evaluation, using a database of 641 families. The results show that the excessive energy expenditure and the type and energy source of heating systems indicators are the variables with the greatest influence on energy poverty assessments.
