    Using data from Eurobarometer 83.4, this study combines the two branches of research that address climate-related and biodiversity-related opinions and actions of individuals in the EU. The literature shows that the differences between climate-related and biodiversity-related policies correspond, at an individual level, to a person's basic attitudes towards environmental protection and towards nature protection, respectively. The contribution of this study is to demonstrate how these attitudes can influence behavior that has environmental repercussions for both issues, such as food consumption practices. The analysis focused on two Eurobarometer questions about buying local and seasonal food (to fight climate change) and about buying organic and local food (to protect biodiversity and nature). The results of two multinomial regression analyses, separately in Northwestern European countries and Eastern and Southern European countries, demonstrated that climate-related and biodiversity-related attitudes were, independent of each other, related to the adoption of these purchase behaviors. The results may support Europe's new Farm to Fork (F2F) strategy and indicate that improving food consumption practices can enable individuals to better play their part in fighting climate change and biodiversity loss simultaneously, which opens up interesting new perspectives for policymakers, businesses and consumers.

    This paper aims to highlight the position of meat reduction in what EU consumers think "eating a healthy and sustainable diet" involves and who has a role to play in achieving food system change. The data are based on the Eurobarometer 93.2 survey (mid 2020). The participants were asked to make their own selections out of a variety of food-related items and actors, linked to meat ("Eating meat less often") and other aspects of diets ("Eating more fruit and vegetables"). Their responses were analyzed separately in two EU regions: Northwest Europe-consisting of the 10 richest EU countries with the highest scores on economic and social sustainable development indicators- and the East and the South. Three principal components of dietary thinking were distinguished, relating to 1) nutrition issues, 2) easy "light green" issues and 3) more demanding "deeper green" issues, respectively. The analysis also distinguished three types of actors in the value chain (food chain actors, supporting actors, and governmental actors). In Northwestern Europe, a majority of consumers saw a role for themselves in making the food system more sustainable and a large minority saw meat reduction as part of a healthy and sustainable diet. Both responses were much less common in the East and South. In the Northwest, meat reduction was relatively strongly related to "deeper green" thinking but also weakly to nutrition-focused thinking, whereas the opposite was found in the East and South. However, meat reduction had no prominent position in their considerations. For policy-makers, therefore, it is crucial that both nutrition and environment can be motivating factors for consumers to consider meat reduction, albeit to different degrees.

    PurposeA shift to a healthy and sustainable diet (as recommended by the EAT Lancet Commission) needs to have a strong societal legitimation. This makes it relevant to investigate to what extent countries are using their Food-Based Dietary Guidelines (FBDGs) in ways that can stimulate such a shift.Design/methodology/approachGiven the pivotal role of protein, the authors examined what patterns of protein-related recommendations are used to guide consumers and how these patterns are related to specific contexts and societal priorities of the countries.FindingsThe analysis of data from 93 countries worldwide revealed two emerging patterns of recommendations. One pattern (found in a cluster of 23% of the countries) combined positive advice about key protein sources with limiting messages to reduce (or replace) the consumption of animal protein. The other pattern (found in a cluster of 24%) encouraged both animal and plant protein, thereby diversifying the set of protein sources, without negative advice on animal-based food sources. The two patterns of recommendations were differently associated with health and nutrition variables, including the countries' level of animal protein supply (in particular, dairy) and the prevalence of overweight individuals among adult men.Social implicationsFor all stakeholders, it is of crucial importance to realize that an increasing number of countries in the world are moving in the direction of acknowledging and addressing the diet-health-environment nexus by adapting their patterns of recommendations for key protein sources.Originality/valueThis study is the first that reveals patterns in recommendations with respect to protein sources by different nations worldwide.

    This paper adds to the food, health and sustainability literature by examining the content, merits, and limitations of a frame-based approach to assist consumers on the path to a healthy and sustainable diet, focusing on reducing conventional meat consumption. The paper combined literature on frames with literature on meat consumption. It showed that meat eating was connected to the frames that guide consumer choices through sensory-based associations (savory, satisfying) and conceptual interpretations of meals and social situations. It also showed that the science-based health and sustainability arguments in favor of a diet change do not sufficiently reach consumers or are too difficult for them to comprehend. To reach consumers, therefore, it is crucial to develop bridging frames that work as push factors away from routine meat eating, or pull factors that encourage the consumption of primarily plant-based protein and special meat types. These frames (recipes, point-of-sale information) should build on the familiar culinary principles of variety, balance, and moderation, offer a moderate amount of novelty, and enable consumers to make positive sensory associations and coherent interpretations of healthy and sustainable protein dishes. A potential limitation of a frame-based approach is that it requires much attention to detail and context.

    Meat reduction might become a new extension of the personal climate actions in the European Union (EU), but this development is not without challenges. Focusing on consumers, this paper investigates 1) how meat reduction is related to other climate actions and 2) how adopters of meat reduction and those who just take other actions differ in concerns about world problems and sociocultural characteristics. The data are from Eurobarometer 95.1 (Spring 2021). The analyses revealed that the adoption of meat reduction was related to the adoption of other climate actions, but that it was not on par with mainstream pro-environmental actions. Participants who incorporated meat reduction in their climate actions were more than the others motivated by broad environmental, social and public health concerns. Those who did not incorporate meat reduction scored lower on these concerns and might have been negatively affected by incongruences between the cultural meaning of meat reduction and their cultural identities in terms of right-wing positions, masculinity or social class. The results showed that meat reduction is part of an adoption process and that the Northwestern countries were somewhat further on in this process than the Southern and Eastern countries.

    Fish has several benefits that make it a desirable part of a healthy diet. It is also a high-protein product that can be used as a relatively efficient meat replacer. Both from a health and sustainability perspective, however, it is important to consider the optimum number of fish servings per week and to examine whether fish and plant protein can be brought under the same heading of alternative protein sources. To explore the consumer perspective on these issues, this paper draws on a brief literature study and a re-analysis of survey data from the Netherlands collected earlier. The hypothesis was that affinities with fish consumption and plant-based protein sources are to a certain extent related to each other, based on common relationships with food involvement, which set them apart from meat. The results showed that the hypothesis needed to be nuanced: fish consumption was associated exclusively with affinity with spicy meals based on authentic plant protein sources (e.g. nuts) and this relationship was partially based on food involvement. The results are in line with current Dutch recommendations that encourage consumers to eat one serving of fish per week and that stimulate those who already eat more than one serving of fish to replace the rest by plant-based protein sources.

    Background: This study aims to find diets with low price and low climate impact, yet fulfilling all nutritional requirements. Methods: Optimization by linear programming. The program constrains 33 nutrients to fulfill Dutch dietary requirements. In a second cycle, the upper boundary for climate impact through greenhouse gas emissions (GHGE) is set to 1.6 kg carbon dioxide equivalents/day (CO2eq). In a third cycle, the costs are set on €2.50 as a constraint. The objective function of the optimization maximized the most consumed food products (n = 206) for male and female adults separately (age 31–50). Results: A diet of 63 popular and low priced basic products was found to deliver all required nutrients at an adequate level for both male and female adults. This plant-based, carbohydrate and fiber-rich diet consists mainly of wholegrain bread, potatoes, muesli, open-field vegetables and fruits. The climate impact of this diet is very low (1.59 kg CO2eq/day) compared to the average Dutch diet. By constraining costs, a low carbon diet of €2.59/day is possible. Conclusions: A two-person diet consisting of 63 products and costing €37 per week can simultaneously be healthy and yet have half the average climate impact. Linear programming is a promising tool to combine health and sustainability on both societal and individual levels.

    This study explored whether EU's new Farm to Fork strategy (F2F)—which aims to tackle climate change, protect the environment and preserve biodiversity in the pursuit of more sustainable food practices—moves in a direction that matches consumer concerns about global issues. A key point is that the traditional differences between the policy approaches related to climate change mitigation and to biodiversity protection, respectively, correspond to differences between environment-based and nature-based attitudes at an individual level. Data from Eurobarometer 92.4 (2019) provided a set of environmental concerns and two food-related pro-environmental actions (buying local products and making a diet change to more sustainable food). Consumer responses to the latter option were assumed to indicate steps in parallel with F2F. Two multinomial regression analyses were carried out separately in Northwestern European countries, and in Eastern and Southern European countries. In both analyses, climate change and species decline were distinct sources of consumer concern, which were—independent of one another—more strongly related to reporting both options than to one option only. It was concluded that the F2F policy is in line with consumer concerns about environment and nature and that this may create important new perspectives for policymakers, businesses and consumers.

    In this research it is aimed to outline the role and potential contribution of insects towards food security and sustainability from a multidisciplinary perspective. First, ecological, economic and social aspects of food sustainability and food security are identified by prioritising the environmental impacts associated with food production and consumption. Subsequently, it is argued how protein supply is underlying and linking the top-3 of anthropogenic impacts, i.e. (1) biodiversity loss; (2) nitrogen cycle acceleration; and (3) carbon cycle acceleration (resulting in climate change). In order to address the production and consumption inefficiencies inherent to the current food system a ranked list of more sustainable options is proposed, based on their order of magnitude. Versatile side-stream valorisation returning losses to the food chain is deemed a unique selling point of insects. In addition to quantitative impacts, however, qualitative aspects relating to feasibility also play an important part. In that respect, just a minority of Western consumers are inclined to adopt insects as food. As an illustration, consumer acceptance of edible insects as attractive food items are quantified at the level of diets, dishes and ingredients (for the Netherlands). From the perspective of sustainability, the potential of insects is reflected upon. Meeting the UN Sustainable Development Goals requires a relatively rapid transition towards a circular economy. In this light, insects are undeniably useful for food, feed, and other purposes. Health may be key to entice consumers to drop their conservative attitudes and progress towards a diet transition. However, an integrated, multidisciplinary approach including all stakeholders remains a prerequisite.

    Climate change may cause most harm to countries that have historically contributed the least to greenhouse gas emissions and land-use change. This paper identifies consequentialist and non-consequentialist ethical principles to guide a fair international burden-sharing scheme of climate change adaptation costs. We use these ethical principles to derive political principles - historical responsibility and capacity to pay - that can be applied in assigning a share of the financial burden to individual countries. We then propose a hybrid 'common but differentiated responsibilities and respective capabilities' approach as a promising starting point for international negotiations on the design of burden-sharing schemes. A numerical assessment of seven scenarios shows that the countries of Annex I of the United Nations Framework Convention on Climate Change would bear the bulk of the costs of adaptation, but contributions differ substantially subject to the choice of a capacity to pay indicator. The contributions are less sensitive to choices related to responsibility calculations, apart from those associated with land-use-related emissions. Assuming costs of climate adaptation of USD 100 billion per year, the total financial contribution by the Annex I countries would be in the range of USD 65-70 billion per year. Expressed as a per capita basis, this gives a range of USD 43-82 per capita per year.

    Using data from Eurobarometer 83.4, this study combines the two branches of research that address climate-related and biodiversity-related opinions and actions of individuals in the EU. The literature shows that the differences between climate-related and biodiversity-related policies correspond, at an individual level, to a person's basic attitudes towards environmental protection and towards nature protection, respectively. The contribution of this study is to demonstrate how these attitudes can influence behavior that has environmental repercussions for both issues, such as food consumption practices. The analysis focused on two Eurobarometer questions about buying local and seasonal food (to fight climate change) and about buying organic and local food (to protect biodiversity and nature). The results of two multinomial regression analyses, separately in Northwestern European countries and Eastern and Southern European countries, demonstrated that climate-related and biodiversity-related attitudes were, independent of each other, related to the adoption of these purchase behaviors. The results may support Europe's new Farm to Fork (F2F) strategy and indicate that improving food consumption practices can enable individuals to better play their part in fighting climate change and biodiversity loss simultaneously, which opens up interesting new perspectives for policymakers, businesses and consumers.

    This paper aims to highlight the position of meat reduction in what EU consumers think "eating a healthy and sustainable diet" involves and who has a role to play in achieving food system change. The data are based on the Eurobarometer 93.2 survey (mid 2020). The participants were asked to make their own selections out of a variety of food-related items and actors, linked to meat ("Eating meat less often") and other aspects of diets ("Eating more fruit and vegetables"). Their responses were analyzed separately in two EU regions: Northwest Europe-consisting of the 10 richest EU countries with the highest scores on economic and social sustainable development indicators- and the East and the South. Three principal components of dietary thinking were distinguished, relating to 1) nutrition issues, 2) easy "light green" issues and 3) more demanding "deeper green" issues, respectively. The analysis also distinguished three types of actors in the value chain (food chain actors, supporting actors, and governmental actors). In Northwestern Europe, a majority of consumers saw a role for themselves in making the food system more sustainable and a large minority saw meat reduction as part of a healthy and sustainable diet. Both responses were much less common in the East and South. In the Northwest, meat reduction was relatively strongly related to "deeper green" thinking but also weakly to nutrition-focused thinking, whereas the opposite was found in the East and South. However, meat reduction had no prominent position in their considerations. For policy-makers, therefore, it is crucial that both nutrition and environment can be motivating factors for consumers to consider meat reduction, albeit to different degrees.

    PurposeA shift to a healthy and sustainable diet (as recommended by the EAT Lancet Commission) needs to have a strong societal legitimation. This makes it relevant to investigate to what extent countries are using their Food-Based Dietary Guidelines (FBDGs) in ways that can stimulate such a shift.Design/methodology/approachGiven the pivotal role of protein, the authors examined what patterns of protein-related recommendations are used to guide consumers and how these patterns are related to specific contexts and societal priorities of the countries.FindingsThe analysis of data from 93 countries worldwide revealed two emerging patterns of recommendations. One pattern (found in a cluster of 23% of the countries) combined positive advice about key protein sources with limiting messages to reduce (or replace) the consumption of animal protein. The other pattern (found in a cluster of 24%) encouraged both animal and plant protein, thereby diversifying the set of protein sources, without negative advice on animal-based food sources. The two patterns of recommendations were differently associated with health and nutrition variables, including the countries' level of animal protein supply (in particular, dairy) and the prevalence of overweight individuals among adult men.Social implicationsFor all stakeholders, it is of crucial importance to realize that an increasing number of countries in the world are moving in the direction of acknowledging and addressing the diet-health-environment nexus by adapting their patterns of recommendations for key protein sources.Originality/valueThis study is the first that reveals patterns in recommendations with respect to protein sources by different nations worldwide.

    This paper adds to the food, health and sustainability literature by examining the content, merits, and limitations of a frame-based approach to assist consumers on the path to a healthy and sustainable diet, focusing on reducing conventional meat consumption. The paper combined literature on frames with literature on meat consumption. It showed that meat eating was connected to the frames that guide consumer choices through sensory-based associations (savory, satisfying) and conceptual interpretations of meals and social situations. It also showed that the science-based health and sustainability arguments in favor of a diet change do not sufficiently reach consumers or are too difficult for them to comprehend. To reach consumers, therefore, it is crucial to develop bridging frames that work as push factors away from routine meat eating, or pull factors that encourage the consumption of primarily plant-based protein and special meat types. These frames (recipes, point-of-sale information) should build on the familiar culinary principles of variety, balance, and moderation, offer a moderate amount of novelty, and enable consumers to make positive sensory associations and coherent interpretations of healthy and sustainable protein dishes. A potential limitation of a frame-based approach is that it requires much attention to detail and context.

    Meat reduction might become a new extension of the personal climate actions in the European Union (EU), but this development is not without challenges. Focusing on consumers, this paper investigates 1) how meat reduction is related to other climate actions and 2) how adopters of meat reduction and those who just take other actions differ in concerns about world problems and sociocultural characteristics. The data are from Eurobarometer 95.1 (Spring 2021). The analyses revealed that the adoption of meat reduction was related to the adoption of other climate actions, but that it was not on par with mainstream pro-environmental actions. Participants who incorporated meat reduction in their climate actions were more than the others motivated by broad environmental, social and public health concerns. Those who did not incorporate meat reduction scored lower on these concerns and might have been negatively affected by incongruences between the cultural meaning of meat reduction and their cultural identities in terms of right-wing positions, masculinity or social class. The results showed that meat reduction is part of an adoption process and that the Northwestern countries were somewhat further on in this process than the Southern and Eastern countries.

    Fish has several benefits that make it a desirable part of a healthy diet. It is also a high-protein product that can be used as a relatively efficient meat replacer. Both from a health and sustainability perspective, however, it is important to consider the optimum number of fish servings per week and to examine whether fish and plant protein can be brought under the same heading of alternative protein sources. To explore the consumer perspective on these issues, this paper draws on a brief literature study and a re-analysis of survey data from the Netherlands collected earlier. The hypothesis was that affinities with fish consumption and plant-based protein sources are to a certain extent related to each other, based on common relationships with food involvement, which set them apart from meat. The results showed that the hypothesis needed to be nuanced: fish consumption was associated exclusively with affinity with spicy meals based on authentic plant protein sources (e.g. nuts) and this relationship was partially based on food involvement. The results are in line with current Dutch recommendations that encourage consumers to eat one serving of fish per week and that stimulate those who already eat more than one serving of fish to replace the rest by plant-based protein sources.

    Background: This study aims to find diets with low price and low climate impact, yet fulfilling all nutritional requirements. Methods: Optimization by linear programming. The program constrains 33 nutrients to fulfill Dutch dietary requirements. In a second cycle, the upper boundary for climate impact through greenhouse gas emissions (GHGE) is set to 1.6 kg carbon dioxide equivalents/day (CO2eq). In a third cycle, the costs are set on €2.50 as a constraint. The objective function of the optimization maximized the most consumed food products (n = 206) for male and female adults separately (age 31–50). Results: A diet of 63 popular and low priced basic products was found to deliver all required nutrients at an adequate level for both male and female adults. This plant-based, carbohydrate and fiber-rich diet consists mainly of wholegrain bread, potatoes, muesli, open-field vegetables and fruits. The climate impact of this diet is very low (1.59 kg CO2eq/day) compared to the average Dutch diet. By constraining costs, a low carbon diet of €2.59/day is possible. Conclusions: A two-person diet consisting of 63 products and costing €37 per week can simultaneously be healthy and yet have half the average climate impact. Linear programming is a promising tool to combine health and sustainability on both societal and individual levels.

    This study explored whether EU's new Farm to Fork strategy (F2F)—which aims to tackle climate change, protect the environment and preserve biodiversity in the pursuit of more sustainable food practices—moves in a direction that matches consumer concerns about global issues. A key point is that the traditional differences between the policy approaches related to climate change mitigation and to biodiversity protection, respectively, correspond to differences between environment-based and nature-based attitudes at an individual level. Data from Eurobarometer 92.4 (2019) provided a set of environmental concerns and two food-related pro-environmental actions (buying local products and making a diet change to more sustainable food). Consumer responses to the latter option were assumed to indicate steps in parallel with F2F. Two multinomial regression analyses were carried out separately in Northwestern European countries, and in Eastern and Southern European countries. In both analyses, climate change and species decline were distinct sources of consumer concern, which were—independent of one another—more strongly related to reporting both options than to one option only. It was concluded that the F2F policy is in line with consumer concerns about environment and nature and that this may create important new perspectives for policymakers, businesses and consumers.

    In this research it is aimed to outline the role and potential contribution of insects towards food security and sustainability from a multidisciplinary perspective. First, ecological, economic and social aspects of food sustainability and food security are identified by prioritising the environmental impacts associated with food production and consumption. Subsequently, it is argued how protein supply is underlying and linking the top-3 of anthropogenic impacts, i.e. (1) biodiversity loss; (2) nitrogen cycle acceleration; and (3) carbon cycle acceleration (resulting in climate change). In order to address the production and consumption inefficiencies inherent to the current food system a ranked list of more sustainable options is proposed, based on their order of magnitude. Versatile side-stream valorisation returning losses to the food chain is deemed a unique selling point of insects. In addition to quantitative impacts, however, qualitative aspects relating to feasibility also play an important part. In that respect, just a minority of Western consumers are inclined to adopt insects as food. As an illustration, consumer acceptance of edible insects as attractive food items are quantified at the level of diets, dishes and ingredients (for the Netherlands). From the perspective of sustainability, the potential of insects is reflected upon. Meeting the UN Sustainable Development Goals requires a relatively rapid transition towards a circular economy. In this light, insects are undeniably useful for food, feed, and other purposes. Health may be key to entice consumers to drop their conservative attitudes and progress towards a diet transition. However, an integrated, multidisciplinary approach including all stakeholders remains a prerequisite.

    Climate change may cause most harm to countries that have historically contributed the least to greenhouse gas emissions and land-use change. This paper identifies consequentialist and non-consequentialist ethical principles to guide a fair international burden-sharing scheme of climate change adaptation costs. We use these ethical principles to derive political principles - historical responsibility and capacity to pay - that can be applied in assigning a share of the financial burden to individual countries. We then propose a hybrid 'common but differentiated responsibilities and respective capabilities' approach as a promising starting point for international negotiations on the design of burden-sharing schemes. A numerical assessment of seven scenarios shows that the countries of Annex I of the United Nations Framework Convention on Climate Change would bear the bulk of the costs of adaptation, but contributions differ substantially subject to the choice of a capacity to pay indicator. The contributions are less sensitive to choices related to responsibility calculations, apart from those associated with land-use-related emissions. Assuming costs of climate adaptation of USD 100 billion per year, the total financial contribution by the Annex I countries would be in the range of USD 65-70 billion per year. Expressed as a per capita basis, this gives a range of USD 43-82 per capita per year.
