This study aims to investigate selected organic initiatives and organic food sectors in different locations, such as capital cities, rural areas, and the bio-district in SysOrg project consortium, in the Warsaw municipality in Poland, North Hessia region in Germany, Cilento bio-district in Italy, Kenitra province in Morocco, and Copenhagen municipality in Denmark to uncover the diverse drivers, barriers, and entry points to enable a transformation process to resilient and sustainable organic food systems. Methods: Following the methodology of the SysOrg project, this study relied on the following mixed data collection methods: quantitative (a household survey distributed among citizens) and qualitative (semi-structured interviews with organized initiatives). Results: The results demonstrate that, despite being in different stages of development in the investigated territories, the organic sector is challenged by similar barriers (e.g., undeveloped market, regulatory/budgetary constraints, and lack of knowledge and awareness) and benefits from analogous drivers (e.g., awareness and education, community support, and incentives). Conclusions: Those similarities, but also analyses of their differences and origins, allowed us to establish critical entry points for the development of a sustainable organic food system, e.g., promoting organics through a top-down approach, providing training and education, reducing information delay, popularizing negative feedback, strengthening the effectiveness of a given incentives scheme by tailored nudging mechanisms, establishing country/regional specific traditional frames, making the system more inclusive, building organic communities, and awareness-building.

This work resulted in the development, exploration and implementation of experiential learning activities and outcomes enabling the academic community to develop and exchange knowledge about territorially embedded food systems (EFS) and gain insight into possible pathways of their implementation. Through these multidisciplinary activities, the academic community, with the involvement of the explored EFS actors, developed teaching materials to contribute to supporting the sustainable development of rural food systems and their communities, based on experience and peer-to-peer learning. Local knowledge, built on the traditions and experiences of the local territory, supported by the input of qualified university graduates, has the potential to contribute to building sustainable, territorially embedded food systems, addressing challenges related to, i.e., resource constraints, diverse food quality and safety aspects, the environmental impacts of food production, biodiversity, food sovereignty, adapting to climate change, etc. To achieve the project’s goals, educational content and activities tailored to students’ preferences and major educational gaps were created in the form of e-learning courses and intensive study programs (summer schools). Students from six countries (PL, IT, FR, DE, BG, and RO) participated in two experiential-learning-focused summer schools in the Münsterland and Piedmont regions (2022, 2023). The project research team analyzed the students’ understanding of the concept of EFS and identified their preferred methods of learning about EFS. Educational materials for students, descriptions of selected EFS case studies and a guide on innovative teaching about territorially embedded food systems addressed to academics working in this subject area were developed. The created, publicly available educational materials and approaches may be used in the future to support the restoration and development of socially, economically and environmentally sustainable EFS in the rural areas of Europe.

It has been broadly reported that the production of animal-derived foods significantly contributes to the environmental footprint of the agri-food sector, considering, among others, such indicators as land use, greenhouse gas emissions, and the water footprint. However, the environmental sustainability aspects of whole diets (i.e., more plant-based vs. meat-containing) have been studied so far to a limited extent, in many cases not taking into consideration various regional settings, which to a great extent determine meat- and other animal-derived foods’ substitutes consumed by vegetarians and vegans. The aim of this study was therefore to assess the environmental indicators of vegetarian, vegan, and meat-containing diets of a selected group of Polish consumers. Based on three-day food records of 24 respondents and the published data on the environmental footprint of a range of foodstuffs, the three dietary environmental indicators were calculated. In addition, the results were standardized in terms of dietary protein intake and energy value. The study showed the elimination of meat and other animal-derived foods from the respondents’ diet was predominantly motivated by their concerns related to animal welfare issues, which appeared to be a stronger factor than the willingness to reduce the diets’ environmental footprint. Following the results standardization, the studied vegetarian and vegan diets were characterized by 47.0% and 64.4% lower carbon footprint, 32.2% and 60.9% lower land use indicators, and 37.1% and 62.9% lower water footprints, respectively, compared to the meat-containing diet. Animal-derived foods, including milk and dairy, appeared to be the main contributors to all three environmental footprint indicators of both the meat-containing and the vegetarian diets. In the vegan group, the environmental footprint was found to be mainly influenced by the consumption of legumes and legume-based foods, cereal products, potatoes, sugar, products containing cocoa and vegetables, with nuts showing especially significant contribution to the fresh water consumption. The study confirms moving towards more plant-based diet has a potential to significantly reduce the diet’s environmental footprint. It also contributes to creating a ‘roadmap’ for consumers, to encourage them to plan their diets responsibly, taking into consideration both the health and the environmental sustainability aspects.

Current studies about adherence to existing national and global dietary recommendations often lack the ability to cross-compare the results among countries. Therefore, this study aims to develop a methodology to evaluate adherence to food-based dietary guidelines (FBDGs) and the Planetary Health Diet (PHD) on a national level, which can be replicable in different countries. First, national dietary intake data was collected from surveys published by the respective responsible public institutions from five countries (Italy, Denmark, Germany, Morocco, and Poland). Second, food groups represented in the intake data and the FBDGs were mapped to establish a proposal for a new common grouping (i.e., comprehensive food groups) that enables cross-country comparison. Third, dietary intake was compared to the recommendations according to national FBDG and the PHD. The adherence to the recommended diets was assessed using an adapted version of the German Food Pyramid Index. Our results show that different ways of grouping foods may change adherence levels; when measuring adherence to the FBDGs with the food groups suggested in the FBDGs, average scores (45.5 ± 5.4) were lower than by using comprehensive food groups (46.9 ± 3.7). Higher adherence to the PHD (52.4 ± 6.1) was found also using the comprehensive food groups. Particularly the foods meats, eggs, and legumes in one group (i.e., protein equivalents) appear to influence the outcome of scores using the comprehensive food groups. This study developed a methodology to evaluate national dietary intake against national FBDGs and the PHD. Our study points out the fact that it is difficult to overcome the challenge that countries have different food grouping clusters. Yet, the combination of the methods developed enables cross-country comparisons and has the potential to be applied to different national settings globally.

Sustainable food systems have the potential to protect humans and planet health. Green public procurement (GPP) is a tool for the sustainable transformation. In Poland, the share of GPP is extremely low. As part of the StratKIT project, a survey-based research study was carried out in the city of Rybnik (Silesia Region). The aim of this paper is to diagnose the level of awareness in the field of sustainable development of the project stakeholders, and to propose further sustainable actions related to GPP in Poland. The survey was conducted in social care homes and two primary schools. Statistical analyses were performed using SPSS 24 software. The results show that the level of education has an impact on the assessment of the environment, and that the place of residency interferes with the level of environmental, organic and nutritional knowledge. Correlational analysis showed no statistically significant relationships between age, level of education, place of residence and willingness to introduce action connected to GPP (e.g., organic food). In conclusion, there is a need for an appropriate educational program for the public procurement and catering services (PPCS) sector, teaching about advantages of GPP for the food systems in connection to sustainable agriculture, consumption and climate actions.

It has been broadly reported that the production of animal-derived foods significantly contributes to the environmental footprint of the agri-food sector, considering, among others, such indicators as land use, greenhouse gas emissions, and the water footprint. However, the environmental sustainability aspects of whole diets (i.e., more plant-based vs. meat-containing) have been studied so far to a limited extent, in many cases not taking into consideration various regional settings, which to a great extent determine meat- and other animal-derived foods’ substitutes consumed by vegetarians and vegans. The aim of this study was therefore to assess the environmental indicators of vegetarian, vegan, and meat-containing diets of a selected group of Polish consumers. Based on three-day food records of 24 respondents and the published data on the environmental footprint of a range of foodstuffs, the three dietary environmental indicators were calculated. In addition, the results were standardized in terms of dietary protein intake and energy value. The study showed the elimination of meat and other animal-derived foods from the respondents’ diet was predominantly motivated by their concerns related to animal welfare issues, which appeared to be a stronger factor than the willingness to reduce the diets’ environmental footprint. Following the results standardization, the studied vegetarian and vegan diets were characterized by 47.0% and 64.4% lower carbon footprint, 32.2% and 60.9% lower land use indicators, and 37.1% and 62.9% lower water footprints, respectively, compared to the meat-containing diet. Animal-derived foods, including milk and dairy, appeared to be the main contributors to all three environmental footprint indicators of both the meat-containing and the vegetarian diets. In the vegan group, the environmental footprint was found to be mainly influenced by the consumption of legumes and legume-based foods, cereal products, potatoes, sugar, products containing cocoa and vegetables, with nuts showing especially significant contribution to the fresh water consumption. The study confirms moving towards more plant-based diet has a potential to significantly reduce the diet’s environmental footprint. It also contributes to creating a ‘roadmap’ for consumers, to encourage them to plan their diets responsibly, taking into consideration both the health and the environmental sustainability aspects.

Current studies about adherence to existing national and global dietary recommendations often lack the ability to cross-compare the results among countries. Therefore, this study aims to develop a methodology to evaluate adherence to food-based dietary guidelines (FBDGs) and the Planetary Health Diet (PHD) on a national level, which can be replicable in different countries. First, national dietary intake data was collected from surveys published by the respective responsible public institutions from five countries (Italy, Denmark, Germany, Morocco, and Poland). Second, food groups represented in the intake data and the FBDGs were mapped to establish a proposal for a new common grouping (i.e., comprehensive food groups) that enables cross-country comparison. Third, dietary intake was compared to the recommendations according to national FBDG and the PHD. The adherence to the recommended diets was assessed using an adapted version of the German Food Pyramid Index. Our results show that different ways of grouping foods may change adherence levels; when measuring adherence to the FBDGs with the food groups suggested in the FBDGs, average scores (45.5 ± 5.4) were lower than by using comprehensive food groups (46.9 ± 3.7). Higher adherence to the PHD (52.4 ± 6.1) was found also using the comprehensive food groups. Particularly the foods meats, eggs, and legumes in one group (i.e., protein equivalents) appear to influence the outcome of scores using the comprehensive food groups. This study developed a methodology to evaluate national dietary intake against national FBDGs and the PHD. Our study points out the fact that it is difficult to overcome the challenge that countries have different food grouping clusters. Yet, the combination of the methods developed enables cross-country comparisons and has the potential to be applied to different national settings globally.

Sustainable food systems have the potential to protect humans and planet health. Green public procurement (GPP) is a tool for the sustainable transformation. In Poland, the share of GPP is extremely low. As part of the StratKIT project, a survey-based research study was carried out in the city of Rybnik (Silesia Region). The aim of this paper is to diagnose the level of awareness in the field of sustainable development of the project stakeholders, and to propose further sustainable actions related to GPP in Poland. The survey was conducted in social care homes and two primary schools. Statistical analyses were performed using SPSS 24 software. The results show that the level of education has an impact on the assessment of the environment, and that the place of residency interferes with the level of environmental, organic and nutritional knowledge. Correlational analysis showed no statistically significant relationships between age, level of education, place of residence and willingness to introduce action connected to GPP (e.g., organic food). In conclusion, there is a need for an appropriate educational program for the public procurement and catering services (PPCS) sector, teaching about advantages of GPP for the food systems in connection to sustainable agriculture, consumption and climate actions.
