Coffee is one of the most highly traded commodities in global markets. However, the coffee sector experiences significant value chain asymmetries and inequalities, both at the local and global levels. While market instruments may address these imbalances, there is an increasing recognition of the need for governance models that ensure fairness throughout the coffee supply chains, from agricultural production to the roasting and consumption of coffee. This article aims to provide a state-of-the-art review and analysis of research studies on governance dynamics within the coffee chain in Colombia. Colombia is a key coffee-producing country at the global level, with relevant coffee chain governance features. The review encompasses articles published from 2008 to 2023, a period that coincides with significant political and economic transformations in Colombia. The analysis and discussion of the findings highlight key issues and insights for further research to identify potential strategies promoting equity and sustainability within Colombian coffee chain governance.

Going through an era where sustainability and definitions of fairness have been extended and integrated into the agri-food chain, there is a need to understand, on a multi-dimensional and multinational level, the structure of agri-food value chain revenues and consumers’ intentions regarding necessity foods. The study analyzed 1,020 questionnaires from Algeria, Germany, Greece, Italy, and Tunisia revealing that taste prioritizes brand and packaging. Social networks, including family and friends, significantly influence the purchase of fair products. Furthermore, a choice experiment revealed the consumer preferences around attributes of the olive oil case as local, traditional, or organic, from a family or farmer association, in a glass bottle, purchased in small local shops/markets, typical and/or extensive nutritional labeling and health claims, non-relevant branding, and finally a fair price reflecting the reasonable quality of the olive oil product. Regarding the agri-food value chain, the results highlight the revenue distribution among stakeholders as unequal and unfair from consumer perceptions, with an imperative need for transparency. The study investigates in-depth the multifaceted dimensions of the fairness concept in the food market from a consumer’s perception, showing their willingness to pay for necessities based on fair pricing and sustainable practices.

Transitioning agri-food systems towards increased sustainability and resilience requires that attention be paid to sustainable food consumption policies. Policy-making processes often require the engagement and acceptance of key stakeholders. This study analyses stakeholders’ solutions for creating sustainable agri-food systems, through interviews with a broad range of stakeholders including food value chain actors, non-governmental organizations, governmental institutions, research institutions and academic experts. The study draws on 38 in-depth, semi-structured interviews conducted in four European countries: France, Iceland, Italy and the UK, as well as three interviews with high-level EU experts. The interviewees’ solutions were analysed according to a five-category typology of policy tools, encompassing direct activity regulations, and market-based, knowledge-based, governance and strategic policy tools. Most of the identified solutions were located in the strategic tools category, reflecting shared recognition of the need to integrate food policy to achieve long-term goals. Emerging solutions—those which were most commonly identified among the different national contexts—were then used to derive empirically-grounded and more universally applicable recommendations for the advancement of sustainable food consumption policies.

The functioning of food value chains entails a complex organisation from farm to fork which is characterised by various governance forms and externalities which have shaped the overall food system. VALUMICS food value chain case studies: wheat to bread, dairy cows to milk, beef cattle to steak, farmed salmon to fillets and tomato to processed tomato were selected to enable explorative and empirical analysis to better understand the functioning of the food system and, to identify the main challenges that need to be addressed to improve sustainability, integrity, resilience, and fairness of European food chains. The VALUMICS system analysis was executed through four operational phases starting with Groundwork & analysis including mapping specific attributes and impacts of food value chains and their externalities. This was followed by Case study baseline analysis, which provided input to the third phase on Modelling and exploration of future scenarios and finally Policy and synthesis of the overall work. This report is an overall synthesis of the VALUMICS results as follows: • Key findings from the VALUMICS project on the functioning of European food value chains and their impacts on more sustainable, resilient, fairer, and transparent food system are summarised through a compilation of 25 Research Findings and Policy Briefs. • By highlighting the major contributions from the research activities throughout the four phases of the VALUMICS project, this report delivers an assessment of various factors influencing sustainability, resilience, efficiency and fairness and effective chain relationships of different food value chains, and their determinants. • The synthesis of the outcome allows the identification of opportunities and challenges characterising the functioning of food supply chains, and thus, the prospects and potentials for strengthening the EU food sector. Fairness in the agro-food system is an increasingly important issue. Ensuring fair and ethical practices in the agro-food chain is essential for sustainable, effective, and resilient agro-food systems. Identifying and understanding fairness-enabling practices and existing business applications in the agro-food chain is crucial to create a sustainable system. This research study is an extensive literature review analyzing academic and grey literature. Thus, this study aims: (i) to conceptualize fairness in the agro-food system; (ii) to identify the fairness-enabling practices contributing to a fair agro-food system; and (iii) to explore existing agro-food chain business applications relevant to achieving a sustainable and fair agro-food chain. Fairness-enabling practices have a vital role in achieving fairness in the upstream and downstream operational stages of the agro-food chain. On the one hand, the upstream cycle includes many elements, from a ban on unfair trading practices to ethical treatment to farmers, from transparency through technology and innovation to ensuring fair remuneration. The key goal is to improve the position of farmers in the chain. The study considers the following five upstream focused business applications to enable fairness practices: blockchain, cooperatives, interbranch organizations, business applications for small-scale farmers, and Fairtrade. On the other hand, achieving success in the downstream operational stage of the chain depends on fairness-oriented consumer food choice, consumer intention to buy fair food, consumer perceived value of fair food, and increased information and transparency on agro-food costs and price. This paper takes into account two consumer-focused business applications which provide downstream fairness practices: dual entitlement and dynamic pricing. To conclude, agro-food chain actors should learn how to find profit in fairness, and turn fairness-related costs into profitable business models.

Community Supported Agriculture (CSA) is a direct partnership between producer(s) and a group of consumers/members to share the risks and responsibilities of farming activities. CSA aims at producing and providing environmentally, socially, economically, and nutritionally sustainable food. Past research has focused on CSA members’ motivations. This research aims to gain a better understanding of CSA farmers’ perceived benefits and drawbacks in managing a CSA farm, and whether CSA management perception varies in different countries. The research collected data from 35 farmers that were based in the United States (US) and Hungary (HU). Data elaboration includes a one-way Anova test, Chi-square test, principal component analysis, and multiple multivariate linear regressions. The results support that US and HU farmers have similar positive perceptions of CSA farming management, especially in food quality, nutritional value products, environmental, and community benefits. The main differences concentrate on economic, financial, and management perceptions. CSA success as an alternative agro-food production and distribution system relies on the capability to involve CSA members. Therefore, CSA farmers’ management skills may evolve to ensure the performance of communication and community engaging practices. The main CSA concern is ensuring a fair income and living wage for the farmers and labor force. There is a need for better balancing non-monetary and monetary benefits for the farmers.

The fresh fruit industry is a highly dynamic sector in the food market. Fresh fruit chain actors have to adapt to the changing market environment in order to face upcoming challenges. The objective of this study is to analyze the market sustainability of red-fleshed apples (RFA) by exploring consumers’ and fresh fruit industry experts’ and stakeholders’ opinions in Italy and New Zealand. The study was carried out in Italy and New Zealand from December 2018 to June 2019 including 778 consumers and 29 expert and stakeholder interviews. Results show a promising market potential of RFA. Innovative attributes and nutritional value of RFA are the most important factors that push consumers’ interest and willingness to buy RFA. New Zealand consumers and women show a higher appreciation of RFA. The nutritional value of the fruit can be a strategic marketing management attribute especially for health-conscious consumers. However, experts think the market for RFA will develop slowly, and will remain a niche product. Some stakeholders are skeptical about consumer RFA appreciation, and fear that RFA are too radical a novelty on the market. The RFA may be perceived as not natural. There is the need to coordinate food chain stakeholders’ management practices on RFA. This allows to mitigate risks, set food standards acceptable for all chain stakeholders, and make sustainable economic investment on innovation.
