Des photos aériennes à 2 échelles (1/10 000 et 1/2000 environ), non orthoréférencées, mises à disposition par le syndicat conchylicole de la Baie du Mont Saint-Michel, ont été utilisées pour estimer les longueurs de tables ostréicoles en place et le taux d'occupation de ces tables par des poches. Une campagne de terrain a mobilisé durant 3 jours (7 au 9 octobre 2002) une vingtaine de personnes, agents de l'Ifremer aidés d'élèves et d'enseignants du Lycée Maritime de Saint-Malo. Malgré la difficulté d'accéder à de nombreux parcs envasés, un échantillon de 35 stations tirées aléatoirement au sein du cadastre ostréicole (DDAM 35) a pu être visité, et 3 poches sous-échantillonnées par station, afin d'en déterminer le contenu en nombre et poids d'huîtres de différentes classes d'âge. 309 ha parmi les 333 ha concédés ont été considérés comme exploités (concessions inoccupées exclues). Le nombre d'emplacements de poches par ha a été estimé 4567, avec un taux d'occupation de 77%, ce qui amène à un taux effectif d'occupation de 3500 poches par ha en moyenne. Toutes classes d'âge confondues, une poche moyenne contient 245 huîtres et pèse 8.8 kg. La biomasse présente en octobre serait alors de l'ordre de 9500 tonnes (plus ou moins 20%). La fraction d'huîtres de poids supérieur à 50 g doit avoisiner 4700 tonnes, en grande partie vendables en fin d'année.. Ces estimations du stock en place au mois d'octobre 2002, peu précises en raison des difficultés rencontrées (imprécision des photos et difficultés d'accès aux parcs), ont été complétées d'informations recueillies par enquête en automne 2003 auprès de 10 concessionnaires : elles révèlent en particulier l'existence de ventes estivales supérieures à la plupart des autres secteurs. in order to estimate the carrying capacity of Mont Saint-Michel Bay, the stock (or biomass) of cupped oysters, Crassostrea gigas, cultivated intertidally, in Cancale Bay, has been estimated in october 2002. Aerial photographs, at 2 scales (1/10 000 and 1/2000), provided by the mollusc farmers union, have been used to estimate the cumulative length of surelevaged trestles (« tables ») and the occupation rate by oyster bags. A field survey, between the 7th and 9th of october 2002, has been conducted by Ifremer with the help of « Lycée Maritime de Saint-Malo », on 40 sampled stations : 3 subsample bags per station were examined (counts and weights of different age-class oysters). 309 ha out of 333 leased ha were considered exploited (after elimination of unoccupied concessions). The number of surelevated places par ha was estimated to 4567, occupied at a rate of 77%, which leads to 3500 effective oyster bags per ha. All sizes together, a mean bag contains 245 oysters, and weighs 8.8 kg. The oyster biomass in october would so approximate 9500 tons (more or less 20%). From this stock, about 4700 tons of oysters exceed 50g mean weight. These estimations of oyster stock in october 2002, are rather unprecise, due to the unsufficient quality of photographs and access difficulties to muddy oyster parks. They have been completed by direct inquiry about 10 oyster farmers, in autumn 2003.

Les croissances, l'évolution des composants biochimiques et l'état de maturation sexuelle ont été obervés sur deux classes d'âge, l'une âgée de 9 mois en début d'expérience et l'autre âgée de 21 mois. Ces biomasses ont induit des croissances significativement différentes, pour les deux classes d'âge. De même, l'évolution des composants biochimique a été très contrastée, notamment au niveau des teneurs en lipides qui en début d'expérience sont accumulés 2 fois plus vite, lorsque la biomasse est faible, et ce, pour les deux classes d'âge. Par contre, des différences dans les teneurs en glycogène n'apparaissent que pour les huîtres les plus âgées, avec un pic très marqué pour la biomasse la plus faible, et au contraire un chute concomittante pour la plus forte biomasse. La maturation sexuelle a été observée dans toutes les conditions. Les implications de ces résultats sur le cycle biologique en condition d'élevage sont discutées. Two different biomasses (100 g multiplied by m super(-2) and 1 kg multiplied by m super(-2)) of oysters were put in identical sea-water ponds, thus leading to different trophic conditions, corresponding to rearing techniques. Changes in growth, biochemical composition and sexual maturation were recorded for two age groups. The first one included 9 month-old oysters and the second one 21 month-old oysters, at the beginning of the experiment. For both age groups, significant differences were observed in growth and biochemical composition. Lipids were accumulated faster for the lower biomass. However, the only difference concerning glycogen was observed on the older oysters. They showed a peak at the lowest biomass and a decrease at the larger biomass. Sexual maturation was observed in every condition. These results were discussed with regards to the biological cycle under rearing conditions.

Cette rencontre faisait suite à un bref état qui s'était engagé au Congrès de Montpellier sur les "Bases biologiques de l'Aquaculture", où il était apparu que la terminologie et la méthodologie concernant le métabolisme des bivalves devaient être clarifiées. Grâce à une large information auprès des spécialistes français de la physiologie des bivalves, la réunion à La Tremblade a réuni un grand nombre de participants très motivés. Pendant 2 jours des discussions très animées ont permis de bien comprendre les échanges entre les bivalves et leur environnement et d'y jeter un regard neuf, ce qui impliquait une analyse critique du vocabulaire et de la méthodologie. On en trouvera le compte-rendu détaillé dans les différents chapitres de cet ouvrage.

IFREMER.]. 1986 Authors: Caumette, P;La lagune F.brié(5"N.4uW) présente dans les zones pro fondes de sa partie est uarienne des conditions de stratification des eaux pendant les périodes de pluies et de crues, liées aux différences de salinité entre l'épilimnion aéré et l'hypolimnion anoxique. A leur interface, il a été observé une population de bactéries photolrophes formant une couche brune due au mélange de différents genres (Chromatium, Cktorahium et Pélodktyon)). Ces bactéries, dont la production peut atteindre 41 %de la production photosynthétique totale, étaient consommées par des organismes ?,ooplanctoniques (eopépodes, olifères), Au cours de la saison sèche, la colonne d'eau devient homogène et bien aérée (janvier à mai). La couche brune disparaît tandis que les activités des bactéries hctérolrophes et du phytopianclori augmentent rapidement et restent élevées pendant toute cette période. Ainsi, pendant la période de stratification, la matière organtquequisédimeiue, est transformée par des organismes anaérobies dans l'hypolimnion et recyclée dans la chaîne srophique par les bactéries phototrophes, alors que, pendant l'homogénéisation des eaux, elle est surtout recyclée par les bactéries heterotrophics aérobies et le phytoplancton dont les activités augmentent parallèlement. In the deepest parts of the estuarine region of Ebrie Lagoon (Abidjan Africa, (5 degree N, 4 degree W) stratified conditions have been observed during the rainy season (May to Nov.), owing to salinity differences between oxic and anoxic layers. At the interface, 3-4 m depth, phototrophic bacteria (Chromatium, Chlorobium and Pelodictyon ) developed, forming a brown layer due to their different pigments. Their production has been estimated at 41% of the total photosynthetic production during high stratification (Sep. 1981) and their biomass was used by the copepod population for 40 to 60% of its diet. During the dry season, the water column became homogeneous and oxygen was detected to 6m depth. The brown layer of phototrophic bacteria disappeared, as well as sulfate reducers, from the hypolimnion, whereas aerobic heterotrophic bacterial activity and phytoplankton production increased. Thus, They recycled organic and mineral compounds that accumulated in the hypolimnion during stratification. During this stratification, a part of organic and mineral compounds was recycled, by means of anaerobic processes and phototrophic bacteria, thereby making a contribution to the C budget and the food chain which developed in this lagoon.

On présume, en effet, que la baisse actuelle de production de ce bassin aurait pour origine une surcharge de biomasse qui se traduirait au niveau des huîtres par un affaiblissement général de la physiologie. La charge énergétique, développée par ATKINSON (1968), définit l'équilibre énergétique des organismes. Il s'agit du rapport,des nucléotides adényligues, C.E = ( ATP + 1/2 ADP) IATP + ADP + AMP). Nous avons mesure ce paramètre pour apprécier l'état de santé des huîtres. Une étude méthodologique préalable nous a permis de définir les conditions de prélèvements, de conservation et d'extraction pour une analyse ultérieure des nucléotides en HPLC (chromatographie liquide haute performance). La méthode chromatographique, qui dérive de celle de HOFFMAN and LIAO (1977), utilise une colonne en C18 et une élution isocratique en présence d'un contre-ion, le tétrabutylammonium. Les taux de nucléotides des séries adényliques. guanyliques, uridyliques ainsi que la charge énergétique adénylique présentent un effet saisonnier marqué (test de variance). Les concentrations des nucléotides ne sont pas corrélées à la taille de l'animal. Les concentrations les plus élevées sont observées en été au moment de la reproduction. A cette époque la variabilité est aussi la plus forte. En hiver, les hautes valeurs de la charge associées à de faibles concentrations traduiraient des bonnes conditions physiologiques. On suggère que ces variations de taux de nucléotides expriment des changements d'activité métabolique. Ce résultat traduit la capacité des huîtres à adapter leur physiologie en fonction des variations annuelles du milieu. The energy charge was measured for two Crassostrea gigas populations, during an annual survey at Marennes Oleron, to appreciate the condition of health of these oysters. It is assumed that the actual decrease in production of this area is related to a biomass overload which affects the oysters by lowering their scope for growth. Energy charge, an index developped by ATKINSON (1968), defines the energy equilibrium of organisms. It is the adenylic nucleotide ratio: E.C = (ATP + 1/2ADP)/ATP + ADP + AMP). We have measured this parameter to determine the state of health of these oysters. A methodological study has been conducted previously to define the conditions of sampling, conservation and extraction for a HPLC assay. The HPLC method (high performance liquid chromatography) is an adaptation of the HOFFMAN and LIAO (1977) method, that is performed with a C18 column and an isocratic elution with a pairing agent (tetrabutylammonium). A seasonal effect of nucleotide concentrations is observed (ANOVA test). Size exhibits no effect on the values of nucleotide concentrations. The highest values of nucleotides are observed in summer during the reproductive period. At this time, the variability of values is the highest too. In winter, the adenylic energy charge (AEC) is high and the concentrations of nucleotides low, suggesting a good physiological status of the oysters. We assume that the nucleotide variations express modifications in the metabolism level during a seasonal cycle. These results would be related to the capacity of the species to adapt its physiology depending on the seasonal constraints encountered in the field.

The estimation carried out in 1988 was extended to the whole Pertuis Breton and the biomass was assesssed to 14000 tons with a precision of 5,5 %. Suite à l'étude réalisée en 1987, un plan d'échantillonnage à 3 degrés a été adopté pour l'estimation des biomasses de moules en élevage dans les bouchots du Pertuis Breton. La biomasse présente dans l'ensemble du Pertuis a été estimée à 14 000 tonnes avec une précision de 5,5 %.

Les données nécessaires à cette estimation sont recueillies, d'une part, en effectuant des observations de surface et, d'autre part, en réalisant un grand nombre de relevés en plongée. Durant les années 1980 à 1984, on a remarqué une nette augmentation de la biomasse en huîtres (19 200 t en 1980 et 31 700 t en 1984), tandis que durant la même période la biomasse en moule diminuait (11 760 t en 1980 et 9 700 t en 1984). Les différentes simulations tentées aussi bien pour obtenir une idée de la filtration totale que de la biodéposition ont montré que l'impact de l'accroissement global de la biomasse n'est pas aussi important que l'on aurait pu le craindre. Since 1980, the IFREMER research laboratory "Resources Aquacoles", Sete (France), follows during the summer period, the evolution of the commercial stocks of molluscs (mussels and oysters) reared in Thau Lagoon. The data for this estimation are collected, on one hand, by surface observations and, on the other hand, by diving observations. During the years 1980 to 1984, the authors noticed an increase of oyster biomass, during the same period the mussel biomass decreased. The different simulations used to know the total filtration and the biodeposit, have shown that the impact of the increase of the total biomass is not so important as it could be feared.

Des photos aériennes à 2 échelles (1/10 000 et 1/2000 environ), non orthoréférencées, mises à disposition par le syndicat conchylicole de la Baie du Mont Saint-Michel, ont été utilisées pour estimer les longueurs de tables ostréicoles en place et le taux d'occupation de ces tables par des poches. Une campagne de terrain a mobilisé durant 3 jours (7 au 9 octobre 2002) une vingtaine de personnes, agents de l'Ifremer aidés d'élèves et d'enseignants du Lycée Maritime de Saint-Malo. Malgré la difficulté d'accéder à de nombreux parcs envasés, un échantillon de 35 stations tirées aléatoirement au sein du cadastre ostréicole (DDAM 35) a pu être visité, et 3 poches sous-échantillonnées par station, afin d'en déterminer le contenu en nombre et poids d'huîtres de différentes classes d'âge. 309 ha parmi les 333 ha concédés ont été considérés comme exploités (concessions inoccupées exclues). Le nombre d'emplacements de poches par ha a été estimé 4567, avec un taux d'occupation de 77%, ce qui amène à un taux effectif d'occupation de 3500 poches par ha en moyenne. Toutes classes d'âge confondues, une poche moyenne contient 245 huîtres et pèse 8.8 kg. La biomasse présente en octobre serait alors de l'ordre de 9500 tonnes (plus ou moins 20%). La fraction d'huîtres de poids supérieur à 50 g doit avoisiner 4700 tonnes, en grande partie vendables en fin d'année.. Ces estimations du stock en place au mois d'octobre 2002, peu précises en raison des difficultés rencontrées (imprécision des photos et difficultés d'accès aux parcs), ont été complétées d'informations recueillies par enquête en automne 2003 auprès de 10 concessionnaires : elles révèlent en particulier l'existence de ventes estivales supérieures à la plupart des autres secteurs. in order to estimate the carrying capacity of Mont Saint-Michel Bay, the stock (or biomass) of cupped oysters, Crassostrea gigas, cultivated intertidally, in Cancale Bay, has been estimated in october 2002. Aerial photographs, at 2 scales (1/10 000 and 1/2000), provided by the mollusc farmers union, have been used to estimate the cumulative length of surelevaged trestles (« tables ») and the occupation rate by oyster bags. A field survey, between the 7th and 9th of october 2002, has been conducted by Ifremer with the help of « Lycée Maritime de Saint-Malo », on 40 sampled stations : 3 subsample bags per station were examined (counts and weights of different age-class oysters). 309 ha out of 333 leased ha were considered exploited (after elimination of unoccupied concessions). The number of surelevated places par ha was estimated to 4567, occupied at a rate of 77%, which leads to 3500 effective oyster bags per ha. All sizes together, a mean bag contains 245 oysters, and weighs 8.8 kg. The oyster biomass in october would so approximate 9500 tons (more or less 20%). From this stock, about 4700 tons of oysters exceed 50g mean weight. Les croissances, l'évolution des composants biochimiques et l'état de maturation sexuelle ont été obervés sur deux classes d'âge, l'une âgée de 9 mois en début d'expérience et l'autre âgée de 21 mois. Ces biomasses ont induit des croissances significativement différentes, pour les deux classes d'âge. De même, l'évolution des composants biochimique a été très contrastée, notamment au niveau des teneurs en lipides qui en début d'expérience sont accumulés 2 fois plus vite, lorsque la biomasse est faible, et ce, pour les deux classes d'âge. Par contre, des différences dans les teneurs en glycogène n'apparaissent que pour les huîtres les plus âgées, avec un pic très marqué pour la biomasse la plus faible, et au contraire un chute concomittante pour la plus forte biomasse. La maturation sexuelle a été observée dans toutes les conditions. Les implications de ces résultats sur le cycle biologique en condition d'élevage sont discutées. Two different biomasses (100 g multiplied by m super(-2) and 1 kg multiplied by m super(-2)) of oysters were put in identical sea-water ponds, thus leading to different trophic conditions, corresponding to rearing techniques. Changes in growth, biochemical composition and sexual maturation were recorded for two age groups. The first one included 9 month-old oysters and the second one 21 month-old oysters, at the beginning of the experiment. For both age groups, significant differences were observed in growth and biochemical composition. Lipids were accumulated faster for the lower biomass. However, the only difference concerning glycogen was observed on the older oysters. They showed a peak at the lowest biomass and a decrease at the larger biomass. Sexual maturation was observed in every condition. These results were discussed with regards to the biological cycle under rearing conditions.

Cette rencontre faisait suite à un bref état qui s'était engagé au Congrès de Montpellier sur les "Bases biologiques de l'Aquaculture", où il était apparu que la terminologie et la méthodologie concernant le métabolisme des bivalves devaient être clarifiées. Grâce à une large information auprès des spécialistes français de la physiologie des bivalves, la réunion à La Tremblade a réuni un grand nombre de participants très motivés. Pendant 2 jours des discussions très animées ont permis de bien comprendre les échanges entre les bivalves et leur environnement et d'y jeter un regard neuf, ce qui impliquait une analyse critique du vocabulaire et de la méthodologie. On en trouvera le compte-rendu détaillé dans les différents chapitres de cet ouvrage.

A leur interface, il a été observé une population de bactéries photolrophes formant une couche brune due au mélange de différents genres (Chromatium, Cktorahium et Pélodktyon)). Ces bactéries, dont la production peut atteindre 41 %de la production photosynthétique totale, étaient consommées par des organismes ?,ooplanctoniques (eopépodes, olifères), Au cours de la saison sèche, la colonne d'eau devient homogène et bien aérée (janvier à mai). La couche brune disparaît tandis que les activités des bactéries hctérolrophes et du phytopianclori augmentent rapidement et restent élevées pendant toute cette période. Ainsi, pendant la période de stratification, la matière organtquequisédimeiue, est transformée par des organismes anaérobies dans l'hypolimnion et recyclée dans la chaîne srophique par les bactéries phototrophes, alors que, pendant l'homogénéisation des eaux, elle est surtout recyclée par les bactéries heterotrophics aérobies et le phytoplancton dont les activités augmentent parallèlement. In the deepest parts of the estuarine region of Ebrie Lagoon (Abidjan Africa, (5 degree N, 4 degree W) stratified conditions have been observed during the rainy season (May to Nov.), owing to salinity differences between oxic and anoxic layers. At the interface, 3-4 m depth, phototrophic bacteria (Chromatium, Chlorobium and Pelodictyon ) developed, forming a brown layer due to their different pigments. Their production has been estimated at 41% of the total photosynthetic production during high stratification (Sep. 1981) and their biomass was used by the copepod population for 40 to 60% of its diet. During the dry season, the water column became homogeneous and oxygen was detected to 6m depth. The brown layer of phototrophic bacteria disappeared, as well as sulfate reducers, from the hypolimnion, whereas aerobic heterotrophic bacterial activity and phytoplankton production increased. Thus, They recycled organic and mineral compounds that accumulated in the hypolimnion during stratification. During this stratification, a part of organic and mineral compounds was recycled, by means of anaerobic processes and phototrophic bacteria, thereby making a contribution to the C budget and the food chain which developed in this lagoon.

On présume, en effet, que la baisse actuelle de production de ce bassin aurait pour origine une surcharge de biomasse qui se traduirait au niveau des huîtres par un affaiblissement général de la physiologie. La charge énergétique, développée par ATKINSON (1968), définit l'équilibre énergétique des organismes. Il s'agit du rapport,des nucléotides adényligues, C.E = ( ATP + 1/2 ADP) IATP + ADP + AMP). Nous avons mesure ce paramètre pour apprécier l'état de santé des huîtres. Une étude méthodologique préalable nous a permis de définir les conditions de prélèvements, de conservation et d'extraction pour une analyse ultérieure des nucléotides en HPLC (chromatographie liquide haute performance). La méthode chromatographique, qui dérive de celle de HOFFMAN and LIAO (1977), utilise une colonne en C18 et une élution isocratique en présence d'un contre-ion, le tétrabutylammonium. Les taux de nucléotides des séries adényliques. guanyliques, uridyliques ainsi que la charge énergétique adénylique présentent un effet saisonnier marqué (test de variance). Les concentrations des nucléotides ne sont pas corrélées à la taille de l'animal. Les concentrations les plus élevées sont observées en été au moment de la reproduction. A cette époque la variabilité est aussi la plus forte. En hiver, les hautes valeurs de la charge associées à de faibles concentrations traduiraient des bonnes conditions physiologiques. On suggère que ces variations de taux de nucléotides expriment des changements d'activité métabolique. Ce résultat traduit la capacité des huîtres à adapter leur physiologie en fonction des variations annuelles du milieu. The energy charge was measured for two Crassostrea gigas populations, during an annual survey at Marennes Oleron, to appreciate the condition of health of these oysters. It is assumed that the actual decrease in production of this area is related to a biomass overload which affects the oysters by lowering their scope for growth. Energy charge, an index developped by ATKINSON (1968), defines the energy equilibrium of organisms. It is the adenylic nucleotide ratio: E.C = (ATP + 1/2ADP)/ATP + ADP + AMP). We have measured this parameter to determine the state of health of these oysters. A methodological study has been conducted previously to define the conditions of sampling, conservation and extraction for a HPLC assay. The HPLC method (high performance liquid chromatography) is an adaptation of the HOFFMAN and LIAO (1977) method, that is performed with a C18 column and an isocratic elution with a pairing agent (tetrabutylammonium). A seasonal effect of nucleotide concentrations is observed (ANOVA test). Size exhibits no effect on the values of nucleotide concentrations. The highest values of nucleotides are observed in summer during the reproductive period. At this time, the variability of values is the highest too. In winter, the adenylic energy charge (AEC) is high and the concentrations of nucleotides low, suggesting a good physiological status of the oysters. We assume that the nucleotide variations express modifications in the metabolism level during a seasonal cycle. These results would be related to the capacity of the species to adapt its physiology depending on the seasonal constraints encountered in the field.

The estimation carried out in 1988 was extended to the whole Pertuis Breton and the biomass was assesssed to 14000 tons with a precision of 5,5 %. Suite à l'étude réalisée en 1987, un plan d'échantillonnage à 3 degrés a été adopté pour l'estimation des biomasses de moules en élevage dans les bouchots du Pertuis Breton. La biomasse présente dans l'ensemble du Pertuis a été estimée à 14 000 tonnes avec une précision de 5,5 %.

Les données nécessaires à cette estimation sont recueillies, d'une part, en effectuant des observations de surface et, d'autre part, en réalisant un grand nombre de relevés en plongée. Durant les années 1980 à 1984, on a remarqué une nette augmentation de la biomasse en huîtres (19 200 t en 1980 et 31 700 t en 1984), tandis que durant la même période la biomasse en moule diminuait (11 760 t en 1980 et 9 700 t en 1984). Les différentes simulations tentées aussi bien pour obtenir une idée de la filtration totale que de la biodéposition ont montré que l'impact de l'accroissement global de la biomasse n'est pas aussi important que l'on aurait pu le craindre. Since 1980, the IFREMER research laboratory "Resources Aquacoles", Sete (France), follows during the summer period, the evolution of the commercial stocks of molluscs (mussels and oysters) reared in Thau Lagoon. The data for this estimation are collected, on one hand, by surface observations and, on the other hand, by diving observations. During the years 1980 to 1984, the authors noticed an increase of oyster biomass, during the same period the mussel biomass decreased. The different simulations used to know the total filtration and the biodeposit, have shown that the impact of the increase of the total biomass is not so important as it could be feared.
