Description

Sustainability of food systems requires a radical shift towards plant-based protein sources. However, implementing this change in dietary practice is hampered by the low acceptance of non-meat sources. Understanding what makes certain ‘swaps’ in protein source acceptable while others are not is a critical step towards making dietary choices more sustainable. Eating behaviour is highly complex and is determined by the interaction of many disparate factors (genetic, metabolic, physiological, hedonic, anthropological, psychological and sociological). The impact of many of these fields is limited as expertise is contained within single discipline 'silos'. Thus, to be fully effective in changing dietary habits, it is necessary to train a new generation of researchers with scientific expertise in the fields of nutrition and eating behaviour as well as skills in novel data science methods that allow analysis of complex systems. The objective of SWAPS is to actively shape a sustainable food system by equipping a new generation of scientists with appropriate knowledge and skills. The scientific focus of the training-through-research conducted in SWAPS will be the use of data science and predictive artificial intelligence methods to analyse acceptability of consumption changes that lead to sustainable choices of protein source. This approach has huge potential to produce state-of-the-art complex system approaches to nutrition and behaviour change. Currently, this field is completely unexplored. This multi-faceted approach to sustainable food systems is necessary in the food sector for the development of new products and services and for the establishment of sustainable and effective public nutrition policies. SWAPS will be conducted by a group of leading academic institutions and integrates an international industrial partner and key players in collective catering. The SWAPS network proposal will apply to a European Joint Doctoral (EJD) Programme of the ITN (Innovative Training Network) call from Horizon Europe Programme. SWAPS network needs (i) to be strengthened and to gain external visibility and (ii) will greatly benefit from external reviewers. The main use of the resources supported by the MRSEI will thus be the scientific animation of the network in order to strengthen the consortium with relevant partners and the request of external reviews for building a strong proposal with high odds of success.
