From “good for people” to “good for people and planet” – Placing health and environment on equal footing when developing food-based dietary guidelines

Les directives alimentaires sont un outil essentiel pour promouvoir des régimes alimentaires plus sains et plus durables. Malgré plusieurs exemples de directives diététiques qui tiennent compte - à des degrés divers - des aspects de la durabilité environnementale, il n'existe actuellement aucun cadre qui intègre systématiquement la durabilité environnementale en tant que considération primordiale. Nous présentons un cadre en cinq étapes pour élaborer des directives alimentaires durables sur le plan environnemental qui répondraient simultanément aux besoins nutritionnels tout en restant dans les limites de l'environnement. Les étapes comprennent : 1) la détermination d'une alimentation saine moyenne pour différents groupes de population et de critères pour une alimentation saine ; 2) l'identification des aspects environnementaux pertinents et l'établissement des limites correspondantes ; 3) l'identification des effets systémiques et des aspects cruciaux de durabilité ; 4) la modification de l'alimentation moyenne pour atteindre les objectifs environnementaux et résoudre les compromis entre les objectifs environnementaux et nutritionnels ; et 5) la formulation de directives alimentaires durables. Pour illustrer le cadre, nous le pilotons dans le contexte suédois, mais il pourrait être utilisé pour n'importe quel autre pays.
Las pautas dietéticas son una herramienta principal para promover dietas más saludables y sostenibles. A pesar de varios ejemplos de pautas dietéticas que consideran, en diversos grados, aspectos de la sostenibilidad ambiental, actualmente no existe un marco que incorpore sistemáticamente la sostenibilidad ambiental como una consideración primordial. Presentamos un marco de cinco pasos para desarrollar pautas dietéticas ambientalmente sostenibles que cumplan simultáneamente con los requisitos nutricionales y se mantengan dentro de los límites ambientales. Los pasos comprenden: 1) determinar una dieta saludable promedio para diferentes grupos de población y criterios para dietas saludables; 2) identificar aspectos ambientales relevantes y establecer los límites correspondientes; 3) identificar efectos sistémicos y aspectos cruciales de sostenibilidad; 4) alterar la dieta promedio para cumplir con los objetivos ambientales y resolver las compensaciones entre los objetivos ambientales y nutricionales; y 5) formular pautas dietéticas sostenibles basadas en alimentos. Para ejemplificar el marco, lo probamos en el contexto sueco, pero podría utilizarse para cualquier otro país.
Dietary guidelines are a primary tool for promoting healthier and more sustainable diets. Despite several examples of dietary guidelines that consider - to various degrees - aspects of environmental sustainability, there is currently no framework that systematically incorporates environmental sustainability as a primary consideration. We present a five-step framework for developing environmentally sustainable dietary guidelines that would simultaneously meet nutritional requirements while staying within environmental boundaries. The steps comprise: 1) determining an average healthy diet for different population groups and criteria for healthy diets; 2) identifying relevant environmental aspects and establishing corresponding boundaries; 3) identifying systemic effects and crucial sustainability aspects; 4) altering the average diet to meet environmental goals and resolve trade-offs between environmental and nutritional goals; and 5) formulating sustainable food-based dietary guidelines. To exemplify the framework, we pilot it in the Swedish context, but it could be utilised for any other country.
المبادئ التوجيهية الغذائية هي أداة أساسية لتعزيز النظم الغذائية الصحية والأكثر استدامة. على الرغم من وجود العديد من الأمثلة على المبادئ التوجيهية الغذائية التي تأخذ في الاعتبار - بدرجات متفاوتة - جوانب الاستدامة البيئية، لا يوجد حاليًا إطار يدمج الاستدامة البيئية بشكل منهجي كاعتبار أساسي. نقدم إطارًا من خمس خطوات لتطوير إرشادات غذائية مستدامة بيئيًا تلبي المتطلبات الغذائية في وقت واحد مع البقاء ضمن الحدود البيئية. وتشمل الخطوات ما يلي: 1) تحديد متوسط نظام غذائي صحي لمختلف الفئات السكانية ومعايير النظم الغذائية الصحية ؛ 2) تحديد الجوانب البيئية ذات الصلة ووضع الحدود المقابلة ؛ 3) تحديد الآثار النظامية وجوانب الاستدامة الحاسمة ؛ 4) تغيير متوسط النظام الغذائي لتحقيق الأهداف البيئية وحل المفاضلات بين الأهداف البيئية والغذائية ؛ و 5) صياغة مبادئ توجيهية غذائية مستدامة قائمة على الغذاء. ولتجسيد الإطار، نقوم بتجريبه في السياق السويدي، ولكن يمكن استخدامه لأي بلد آخر.
