Résumé L'ensemble de données Performance de durabilité des aliments certifiés et non certifiés (https://www.doi.org/10.15454/OP51SJ) contient 25 indicateurs de performance économique, environnementale et sociale, estimés pour 27 chaînes de valeur alimentaires certifiées et leurs 27 produits de référence conventionnels. Les indicateurs sont estimés à différents niveaux de la chaîne de valeur : niveau de l'exploitation, niveau de la transformation et niveau de la vente au détail. Il contient également les données brutes à partir desquelles les indicateurs sont estimés, leur source et les tableurs complétés pour les indicateurs suivants : empreinte carbone et kilomètres alimentaires. Cet article décrit la méthode et les indicateurs communs utilisés pour collecter des données pour les vingt-sept produits certifiés et leurs homologues conventionnels. Il présente les hypothèses et les choix, le processus de collecte des données et les méthodes d'estimation des indicateurs conçues pour évaluer les trois dimensions de la durabilité dans un délai raisonnable. Soit : trois mois-personnes pour chaque régime de qualité alimentaire et son produit de référence non certifié. Plusieurs priorisations ont été définies concernant la collecte des données (indicateur, variable, niveau de la chaîne de valeur) ainsi qu'un niveau de représentativité spécifique à chaque variable et type de produit (pays et secteur). Des détails techniques sur la façon dont les variables relativement courantes (par exemple, le nombre d'animaux par hectare) sont combinées en indicateurs (par exemple, l'empreinte carbone) sont fournis dans la documentation complète de l'ensemble de données.

Resumen El conjunto de datos Desempeño en sostenibilidad de alimentos certificados y no certificados (https://www.doi.org/10.15454/OP51SJ) contiene 25 indicadores de desempeño económico, ambiental y social, estimados para 27 cadenas de valor alimentarias certificadas y sus 27 productos de referencia convencionales. Los indicadores se estiman en diferentes niveles de la cadena de valor: nivel de granja, nivel de procesamiento y nivel minorista. También contiene los datos brutos en función de los cuales se estiman los indicadores, su fuente y las calculadoras de hoja de cálculo completadas para los siguientes indicadores: huella de carbono y millas de alimentos. Este artículo describe el método común y los indicadores utilizados para recopilar datos para los veintisiete productos certificados y sus contrapartes convencionales. Presenta los supuestos y las opciones, el proceso de recopilación de datos y los métodos de estimación de indicadores diseñados para evaluar las tres dimensiones de sostenibilidad dentro de un límite de tiempo razonable. Es decir: tres meses-persona para cada esquema de calidad alimentaria y su producto de referencia no certificado. Se establecieron varias prioridades con respecto a la recopilación de datos (indicador, variable, nivel de cadena de valor) junto con un nivel de representatividad específico para cada variable y tipo de producto (país y sector). Abstract The dataset Sustainability performance of certified and non-certified food ( https://www.doi.org/10.15454/OP51SJ ) contains 25 indicators of economic, environmental, and social performance, estimated for 27 certified food value chains and their 27 conventional reference products. The indicators are estimated at different levels of the value chain: farm level, processing level, and retail level. It also contains the raw data based on which the indicators are estimated, its source, and the completed spreadsheet calculators for the following indicators: carbon footprint and food miles. This article describes the common method and indicators used to collect data for the twenty-seven certified products and their conventional counterparts. It presents the assumptions and choices, the process of data collection, and the indicator estimation methods designed to assess the three sustainability dimensions within a reasonable time constraint. That is: three person-months for each food quality scheme and its non-certified reference product. Several prioritisations were set regarding data collection (indicator, variable, value chain level) together with a level of representativeness specific to each variable and product type (country and sector). Technical details on how relatively common variables (e.g., number of animals per hectare) are combined into indicators (e.g., carbon footprint) are provided in the full documentation of the dataset.
